My mother loves food with bold flavors but she has food allergies. I created this version of my Indian favorite especially for her. She and my co-workers love it.

Ingredients

  • 6-10 medium white potatoes
  • 1 cup water
  • 1 cup onions, vidalia, peeled, diced
  • 8 ounces tomato puree
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 3 to 4 tablespoons my marsala seasoning
  • MY MARSALA SEASONING
  • 2 tablespoons ea. yellow curry powder, tumeric, cumin, sea salt
  • 1 tablespoon each cinnomon, paprika, black pepper, nutmeg
  • 2 teaspoons each chili powder and ginger
  • 2 - bay leaves (crushed)

How To Make aloo marsala my way

  • Step 1
    Peel and quarter the potatoes. Take a large pot and melt 2 tablespoons of butter over medium heat. Add the onions and saute for 4 minutes. Add the potatoes and saute for another for minutes.
  • Step 2
    Add the cup of water. Turn the heat up and boil for 3-5 minutes. Reduce the heat to med-low and add the tomato puree, butter and Marsala seasoning. Simmer for ten minutes.
  • Step 3
    Add the cream, mix well and simmer ten more minutes. Serve. You can serve alone or with jasmine rice or naan bread.
  • Step 4
    MY MARSALA Directions: Take all of the spices and mix well. Keep in an air tight container.
