sunny citrus orzo
This is a light and lemony pasta dish that is terrific served with seafood or chicken. You could add grilled shrimp to this dish for an entrée that is great on a warm summer's night. Great to make ahead of time !

Ingredients
- 1 1/2 cups uncooked orzo
- 2 - lemons
- 1 tablespoon lemon zest, grated
- 4 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/3 cup sliced almonds
- 1 tablespoon chives, dried or fresh
- 1 tablespoon basil, dried or fresh
- 1 teaspoon dried parsley
- - salt and pepper to taste
How To Make sunny citrus orzo

Step 1Cook orzo according to package directions. Drain and rinse.

Step 2While orzo is cooking, zest lemon and juice it. If using fresh herbs go ahead and chop them.

Step 3In a bowl add olive oil. While stirring with a whisk add in lemon juice a little at a time to incorporate into olive oil.

Step 4Add herbs and zest to olive oil and lemon mixture then pour over orzo. Add the almonds, salt and pepper to taste, and stir well. I like to serve this dish cold. Great to make ahead !
