Sunny Citrus Orzo

Millie Johnson

This is a light and lemony pasta dish that is terrific served with seafood or chicken. You could add grilled shrimp to this dish for an entrée that is great on a warm summer's night. Great to make ahead of time !

How to Make Sunny Citrus Orzo

  • 1Cook orzo according to package directions. Drain and rinse.
  • 2While orzo is cooking, zest lemon and juice it. If using fresh herbs go ahead and chop them.
  • 3In a bowl add olive oil. While stirring with a whisk add in lemon juice a little at a time to incorporate into olive oil.
  • 4Add herbs and zest to olive oil and lemon mixture then pour over orzo. Add the almonds, salt and pepper to taste, and stir well. I like to serve this dish cold. Great to make ahead !
  • 5I like to serve this with seafood or with Chicken Breast with a Spicy Orange Glaze.
