Never cared to much for Couscous until I tried this one.Quick,easy and yummy.

Ingredients For southwestern couscous

  • 1
    cup water
  • i/2 tsp
    salt
  • 3/4
    cup couscous
  • 2 1/2 Tbsp
    fresh lime juice
  • 1 1/2 Tbsp
    olive oil
  • 1/2 tsp
    ground cumin
  • 1/2 c
    rinsed and drained can black beans
  • 1/2 c
    chopped tomato
  • 1/3 c
    chopped fresh cilantro

How To Make southwestern couscous

  • 1
    Bring 1 cup water and salt to a boil in a medium saucepan,gradually stir in couscous.Remove from heat,cover and let stand 5 minutes. Fluff with a fork.

    While couscous stands,combine lime juice,olive oil and cumin in a large bowl,stir with a whisk. Stir in beans and next 3 ingredients. Add Couscous,toss gently with a fork and serve
