Ingredients
- 1 - cup water
- i/2 teaspoon salt
- 3/4 - cup couscous
- 2 1/2 tablespoons fresh lime juice
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 cup rinsed and drained can black beans
- 1/2 cup chopped tomato
- 1/3 cup chopped fresh cilantro
How To Make southwestern couscous

Step 1Bring 1 cup water and salt to a boil in a medium saucepan,gradually stir in couscous.Remove from heat,cover and let stand 5 minutes. Fluff with a fork.

Step 2While couscous stands,combine lime juice,olive oil and cumin in a large bowl,stir with a whisk. Stir in beans and next 3 ingredients. Add Couscous,toss gently with a fork and serve
