mushroom and swiss mac & cheese

I got this recipe from one of my many personal cookbooks. I automatically knew this would be a hit and family favorite. Great for gatherings, parties or an excellent side dish!

Ingredients

  • 16 ounces of penne pasta or pasta of yoour choice
  • 8 ounces chopped mushrooms
  • 1 small chopped onion
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 - minced garlic clove
  • 5 tablespoons butter
  • 8 ounces package of cream cheese, cubed
  • 1 1/4 cups milk
  • 1 1/4 cups half and half cream
  • 2 1/2 cups shredded swiss cheese
  • 1 1/4 cups parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 - bacon strips cooked and crumbled
  • 1/3 cup bread crumbs
  • 2 tablespoons minced parsley
  • 2 tablespoons melted butter

How To Make mushroom and swiss mac & cheese

  • Step 1
    Preheat oven to 350 degrees. Cook the bacon, crumble it then set it aside. Cook pasta according to package directions. Meanwhile in a large skillet , sauté the mushrooms and onion in 2 tablespoons of butter and 1 tablespoon of the vegetable oil until they are tender. Add the garlic and cook an additional 1 minute then set aside.
  • Step 2
    For the sauce, melt the 5 tablespoons of butter. Stir in the cream cheese until smooth. Gradually add the milk and the half and half cream. Heat through then stir in the cheeses and the salt and pepper until well blended. Stir in the cook crumbled bacon.
  • Step 3
    Drain pasta; toss with the mushroom mixture and the sauce mixture. Transfer to a 9x13 baking dish.
  • Step 4
    Combine the bread crumbs, parsley and 2 tablespoons of melted butter; sprinkle over mixture. Bake uncovered for 30 minutes.
