Ingredients

  • 4 cups cavatappi cooked (corkscrew pasta)
  • 1 cup english cucumber chopped
  • 1 cup grape tomatoes halved or quarted
  • 1/2 cup red or green pepper finely chopped
  • - kalamata olives halved or quarted
  • 3 - scallions finely chopped
  • 3 ounces feta cheese
  • - flat leaf parsley
  • 1/4 cup red onion finely chopped
  • 2 cups arugula
  • 1/2 cup of dressing (see heading below)
  • DRESSING
  • 3 tablespoons red wine vinegar (or combination of vinegar and fresh lemon juice)
  • 1/2 clove garlic
  • 2 tablespoons grated parmesan
  • 1/4 teaspoon oregano
  • 3/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon all-purpose seasoning
  • 1/4 cup teaspoon olive oil (comgination of lemon/garlic & olive oil)

How To Make greek pasta salad

  • Step 1
    Combine red wine vinegar, garlic, parmesan, oregano, sugar, salt, pepper & all-purpose seasoning into food processor; pulse to chop garlic.
  • Step 2
    With food processor running slowly, add olive oil in a steady stream until emulsified
  • Step 3
    Taste and adjust seasoning accordingly
  • Step 4
    Pour dressing over pasta and other ingredients and toos thoroughly to combine and serve.
