better than the blue box mac & cheese

Recently I was babysitting my friend's little five year old girl. I made this for dinner and she said, "Oh, this is much better than the blue box kind my mommy makes." Hence - the title.

Ingredients

  • 1/2 lb. - elbow macaroni
  • 4 slices - smoked bacon
  • 2 - eggs
  • 1 cup - evaporated milk
  • 3/4 tsp. - ground dry mustard
  • 1/2 tsp. - tobasco sauce
  • 10 oz. - block, sharp cheddar cheese, grated
  • 1 tsp. - salt
  • - ground black pepper, to taste

How To Make better than the blue box mac & cheese

  • Step 1
    Cook, drain and crumble 4 slices bacon; set aside. Cook pasta per pkg. instructions. Meanwhile, whisk all ingredients except the bacon & cheese until blended. When pasta finishes cooking, strain and quickly return to the pan. Immediately, pour egg mixture over pasta and stir to combine and begin to cook the egg – add bacon & cheese and continue to stir over low heat until cheese is melted and the macaroni has a smooth, creamy, cheesy sauce. Add ground pepper to taste. Serves 4 – 6 OPTION: Place in oven proof serving dish and slide under the broiler for a minute to lightly brown the top.
