polish cottage cheese pancakes
A co-worker from Poland gave me this recipe. It's good on it's own as a side dish or add your favorite jam and make it a yummy dessert.

Ingredients
- 1 cup cottage cheese small curd
- 2 large eggs
- 3/4 cup flour
- 3 tablespoons sugar
- 1/4 cup milk
- 2 tablespoons butter
How To Make polish cottage cheese pancakes

Step 1Combine all ingredients except butter. Let batter rest for 10 minutes

Step 2Coat a griddle with butter. Pour batter into hot griddle and cook until browned. Flip and brown on other side.

Step 3Serve plain, folded over, or roll them up with jam or ricotta cheese etc..
