I modified this recipe from CROCK-POT RECIPE COLLECTION for a vegetarian option.

Ingredients

  • 1 cup brown lentils
  • 1 small onion
  • 1 stalk celery, trimmed and chopped
  • 1 large carrot, chopped
  • 1/2 teaspoon crushed dried thyme
  • 3 cups vegetable broth or chicken broth
  • - salt and black pepper, to taste
  • 1/4 cup chopped walnuts

How To Make lentils with walnuts

  • Step 1
    Combine lentils, onion, celery, carrot, thyme and broth in 4-quart Crock Pot slow cooker.
  • Step 2
    Cover; cook on high 3 hours. Do not overcook. (Lentils should absorb most or all of broth. Slightly tilt Crock-Pot slow cooker to check.)
  • Step 3
    Season with salt and pepper. Spoon lentils into serving bowl and sprinkle with walnuts.
  • Step 4
    Variation: If desired, top dish with 4 cooked bacon strips cut into bite-size pieces. To serve as a main dish, stir in 1 cup diced cooked ham.
