Ingredients
- 1 cup brown lentils
- 1 small onion
- 1 stalk celery, trimmed and chopped
- 1 large carrot, chopped
- 1/2 teaspoon crushed dried thyme
- 3 cups vegetable broth or chicken broth
- - salt and black pepper, to taste
- 1/4 cup chopped walnuts
How To Make lentils with walnuts

Step 1Combine lentils, onion, celery, carrot, thyme and broth in 4-quart Crock Pot slow cooker.

Step 2Cover; cook on high 3 hours. Do not overcook. (Lentils should absorb most or all of broth. Slightly tilt Crock-Pot slow cooker to check.)

Step 3Season with salt and pepper. Spoon lentils into serving bowl and sprinkle with walnuts.

Step 4Variation: If desired, top dish with 4 cooked bacon strips cut into bite-size pieces. To serve as a main dish, stir in 1 cup diced cooked ham.
