Slow Cooker Crock Pot


  • 1 c
    brown lentils
  • 1 small
  • 1 stalk(s)
    celery, trimmed and chopped
  • 1 large
    carrot, chopped
  • 1/2 tsp
    crushed dried thyme
  • 3 c
    vegetable broth or chicken broth
  • ·
    salt and black pepper, to taste
  • 1/4 c
    chopped walnuts

How to Make Lentils with Walnuts


  1. Combine lentils, onion, celery, carrot, thyme and broth in 4-quart Crock Pot slow cooker.
  2. Cover; cook on high 3 hours. Do not overcook. (Lentils should absorb most or all of broth. Slightly tilt Crock-Pot slow cooker to check.)
  3. Season with salt and pepper. Spoon lentils into serving bowl and sprinkle with walnuts.
  4. Variation: If desired, top dish with 4 cooked bacon strips cut into bite-size pieces. To serve as a main dish, stir in 1 cup diced cooked ham.
