I modified this recipe from CROCK-POT RECIPE COLLECTION for a vegetarian option.

Slow Cooker Crock Pot


1 c
brown lentils
1 small
1 stalk(s)
celery, trimmed and chopped
1 large
carrot, chopped
1/2 tsp
crushed dried thyme
3 c
vegetable broth or chicken broth
salt and black pepper, to taste
1/4 c
chopped walnuts


1Combine lentils, onion, celery, carrot, thyme and broth in 4-quart Crock Pot slow cooker.
2Cover; cook on high 3 hours. Do not overcook. (Lentils should absorb most or all of broth. Slightly tilt Crock-Pot slow cooker to check.)
3Season with salt and pepper. Spoon lentils into serving bowl and sprinkle with walnuts.
4Variation: If desired, top dish with 4 cooked bacon strips cut into bite-size pieces. To serve as a main dish, stir in 1 cup diced cooked ham.
