My husband wasn't too sure about this but once he tried it he loved it.

Ingredients

  • 2 cups couscous
  • 1/2 teaspoon salt
  • 2 tablespoons oil
  • 1/2 cup butter cut into pieces
  • 4 cups vegetable or chicken stock
  • 1 cup edamame fresh or frozen
  • 1 1/2 cups peas fresh or frozen
  • 6 - scallions chopped
  • 1/2 cup fresh parsley chopped
  • 1/2 cup fresh cilantro chopped
  • 1 teaspoon sea salt
  • 2 cups warm water

How To Make green couscous

  • Step 1
    Preheat oven 400 degrees
  • Step 2
    Stir salt into warm water and pour over couscous and let sit 10 minutes. Using your fingers rub the oil into the couscous breaking it up. Put it in a ovenproof dish and sprinkle the butter pieces over top. Bake for 15 minutes.
  • Step 3
    Meanwhile prepare the broth. Pour the stock into a heavy sauce pan and add the edamame, scallions, and peas. Cook for 10 minutes. Add sea salt, cilantro, and parsley. Taste and adjust seasoning.
  • Step 4
    Remove the couscous from the oven. Place on plate. Using a slotted spoon lift out the vegetables and place on couscous. Drizzle some broth around couscous. Serve with additional broth to add as desired.
