2Next day saute Onion and Celery in butter until cooked. While it's cooking cut bread into small cubes.
3Whisk eggs and add to bread cubes. Remove onion and celery from heat and add to mixture. Then mix in warm reserve cooking liquid from turkey giblets. Add enough to make it fairly soggy without turning the bread crumbs to mush. Add rest of ingredients to taste.
4Place warm mixture into turkey cavity and cook with turkey. Place remaining stuffing into greased casserole dish and cook on 350 for 30 to 40 mins.
