frances sutton's cheesy hominy casserole
Did you know hominy is low in calories, fat and sugar, and high in fiber? When I was a kid, I liked it buttered with salt and pepper. This dish is baked with a spicy cheese sauce and black olives. Delish!

Ingredients
- 2 tablespoons butter
- 1 tablespoon corn starch
- 1 cup milk or cream
- 1 - 19 oz. jar pitted ripe olives, chopped, reserve olive juice
- 1 teaspoon worchestershire sauce
- 5 - drops tabasco sauce
- TT - salt and pepper
- 1 dash cayenne pepper
- 8 ounces old english or sharp cheddar cheese, grated
- 2 - 29 oz. cans hominy, drained
How To Make frances sutton's cheesy hominy casserole

Step 1Melt butter and blend in corn starch. Add milk and cook slowly, stirring constantly, until thickened.

Step 2Blend reserved olive juice, Worcestershire Sauce, Tabasco Sauce, salt, pepper, and cayenne pepper into corn starch mixture.

Step 3Stir cheese, olives and hominy into sauce and pour into a greased casserole dish. Bake for 45 minutes at 350 degrees.
