frances sutton's cheesy hominy casserole

Did you know hominy is low in calories, fat and sugar, and high in fiber? When I was a kid, I liked it buttered with salt and pepper. This dish is baked with a spicy cheese sauce and black olives. Delish!

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon corn starch
  • 1 cup milk or cream
  • 1 - 19 oz. jar pitted ripe olives, chopped, reserve olive juice
  • 1 teaspoon worchestershire sauce
  • 5 - drops tabasco sauce
  • TT - salt and pepper
  • 1 dash cayenne pepper
  • 8 ounces old english or sharp cheddar cheese, grated
  • 2 - 29 oz. cans hominy, drained

How To Make frances sutton's cheesy hominy casserole

  • Step 1
    Melt butter and blend in corn starch. Add milk and cook slowly, stirring constantly, until thickened.
  • Step 2
    Blend reserved olive juice, Worcestershire Sauce, Tabasco Sauce, salt, pepper, and cayenne pepper into corn starch mixture.
  • Step 3
    Stir cheese, olives and hominy into sauce and pour into a greased casserole dish. Bake for 45 minutes at 350 degrees.
