Ingredients

1 lbdried blackeyed peas
-
8 cwater
-
6 slicebacon
-
1 bunchgreen onions, chopped
-
1large onion, chopped
-
1green bell pepper, chopped
-
1 cfresh parsely, chopped
-
1small jalapeno, seeded and minced
-
3 clovegarlic, minced
-
2 Tbspworchestershire sauce
-
1/4 tsptabasco
-
1 1/2 tspsalt
-
1 tsppepper
-
1/4 tspdried oregano
-
1/4 tspdried thyme
-
1 lbsmoked sausage, sliced
-
1 1/2 csmoked ham, chopped
-
1 can(s)(14.5 oz) chopped tomatoes with green chilies
How to Make Cajun Blackeyed Peas
- Sort and wash peas.
- Place in a large dutch oven, add water to depth of 2 in. above peas. Cover and let stand 8 hours or overnight.
- Drain peas and return to dutch oven.
- Add 8 cups water; bring to a boil.
- Cover, reduce heat, and simmer 30 minutes, stirring occasionally.
- Add bacon and next 12 ingredients; return to a boil.
- Cover, reduce heat and simmer 30 minutes or until peas are tender.
- Add sausage, ham, and tomatoes; return to a boil.
- Cover, reduce heat, and simmer 30 minutes.
- Remove bacon, if desired.
