btm's herb dressing

This is a great recipe to make in advance. I also substitute wild game--rabbit or pheasant.

Ingredients

  • 2 sticks butter
  • 2 cups chopped celery
  • 1 1/2 cups chopped onion
  • 2 teaspoons thyme leaves
  • 1 12 teaspoons poultry seasoning
  • 1 teaspoon seasoned salt or regular
  • 1/2 teaspoon ground pepper
  • 1 teaspoon parsley
  • 1/4 teaspoon sage
  • 3-5 cups chicken, turkey, sausage, oysters or may use none
  • 1 can mushrooms(small)
  • 14 cups dry unseasoned bread crumbs
  • 4-5 cups chicken broth-depending on desired moistness-more can be added later

How To Make btm's herb dressing

  • Step 1
    Melt butter in large skillet; add celery & onions & cook approx 10 min or until onions are clear.
  • Step 2
    Stir in mushrooms, meat, & spices. Add enough chicken broth to fill skillet. Heat till warm.
  • Step 3
    Heat oven to 375. While oven is heating & skillet mixture is heating, add bread crumbs to large bowl. Add mixture to bread crumbs and gently mix. Add any remaining chicken broth.
  • Step 4
    Spoon entire mixture into 14 x 10 greased baking dish. Bake 40-45 min or until lightly crispy on top. Can be cooled & frozen, to be heated and eaten later(may need to add more chicken broth)
