Adopted this recipe from a dear friend. It is a great change from your "regular" casseroles! I hope you will try this and enjoy it as much as my family does!

  • 4 c
    yellow squash or zucchuni (or mixed)
  • 1 medium
    sweet onion (chopped)
  • 2
    eggs (beaten)
  • 2 c
    mozzarella cheese (shredded or cubed)
  • 1 can(s)
    cresent rolls
  • 1/4 c
  • 1/2 c
    olive oil, extra virgin
  • 1 tsp
  • 1 tsp
  • 1 tsp
    dijon mustard

How to Make Zucchini Squash Casserole


  1. Melt butter and oil and add squash,onions s/p and spices cook until tender.
  2. Do not separate Crescent rolls! Lightly spray bottom of casserole dish with a butter spray, and roll the dough out in dish.
  3. In a small bowl mix eggs and cheese and some seasoning.
  4. Add cheese and eggs to squash mixture cook until cheese is melted.
  5. Pour into casserole dish and bake at 350 for 20 minutes.
  6. Allow dish to cool. Approx. 15-25 minutes. Cut into squares and enjoy!!!!!
