zucchini squash casserole

Adopted this recipe from a dear friend. It is a great change from your "regular" casseroles! I hope you will try this and enjoy it as much as my family does!

Ingredients
- 4 cups yellow squash or zucchuni (or mixed)
- 1 medium sweet onion (chopped)
- 2 - eggs (beaten)
- 2 cups mozzarella cheese (shredded or cubed)
- 1 can cresent rolls
- 1/4 cup butter
- 1/2 cup olive oil, extra virgin
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon dijon mustard
How To Make zucchini squash casserole

Step 1Melt butter and oil and add squash,onions s/p and spices cook until tender.

Step 2Do not separate Crescent rolls! Lightly spray bottom of casserole dish with a butter spray, and roll the dough out in dish.

Step 3In a small bowl mix eggs and cheese and some seasoning.

Step 4Add cheese and eggs to squash mixture cook until cheese is melted.

Step 5Pour into casserole dish and bake at 350 for 20 minutes.

Step 6Allow dish to cool. Approx. 15-25 minutes. Cut into squares and enjoy!!!!!
