zucchini squash casserole

Adopted this recipe from a dear friend. It is a great change from your "regular" casseroles! I hope you will try this and enjoy it as much as my family does!

Ingredients

  • 4 cups yellow squash or zucchuni (or mixed)
  • 1 medium sweet onion (chopped)
  • 2 - eggs (beaten)
  • 2 cups mozzarella cheese (shredded or cubed)
  • 1 can cresent rolls
  • 1/4 cup butter
  • 1/2 cup olive oil, extra virgin
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon dijon mustard

How To Make zucchini squash casserole

  • Step 1
    Melt butter and oil and add squash,onions s/p and spices cook until tender.
  • Step 2
    Do not separate Crescent rolls! Lightly spray bottom of casserole dish with a butter spray, and roll the dough out in dish.
  • Step 3
    In a small bowl mix eggs and cheese and some seasoning.
  • Step 4
    Add cheese and eggs to squash mixture cook until cheese is melted.
  • Step 5
    Pour into casserole dish and bake at 350 for 20 minutes.
  • Step 6
    Allow dish to cool. Approx. 15-25 minutes. Cut into squares and enjoy!!!!!
