Adopted this recipe from a dear friend. It is a great change from your "regular" casseroles! I hope you will try this and enjoy it as much as my family does!

4 c
yellow squash or zucchuni (or mixed)
1 medium
sweet onion (chopped)
eggs (beaten)
2 c
mozzarella cheese (shredded or cubed)
1 can(s)
cresent rolls
1/4 c
1/2 c
olive oil, extra virgin
1 tsp
1 tsp
1 tsp
dijon mustard

How to Make Zucchini Squash Casserole


  • 1Melt butter and oil and add squash,onions s/p and spices cook until tender.
  • 2Do not separate Crescent rolls! Lightly spray bottom of casserole dish with a butter spray, and roll the dough out in dish.
  • 3In a small bowl mix eggs and cheese and some seasoning.
  • 4Add cheese and eggs to squash mixture cook until cheese is melted.
  • 5Pour into casserole dish and bake at 350 for 20 minutes.
  • 6Allow dish to cool. Approx. 15-25 minutes. Cut into squares and enjoy!!!!!
