This tastes like the best stuffing ever. It is baked in an 8x10 casserole, just like regular bread stuffing, but is so moist and flavorful. A great way to use excess zucchini from the garden. Or just freeze the grated zucchini and use it for future enjoyment in this dish.

This zucchini dressing sounds unusual, but tastes wonderful! A terrific addition to most any summer meal when zucchini is prevalent. It mimics bread stuffing in texture and has great flavor. Cheese adds a bit of savoriness and a touch of gooeyness to the dressing. It's definitely different, but we enjoyed this zucchini casserole.

Ingredients
- 3 - eggs
- 1 teaspoon oregano, dried
- 1 teaspoon black pepper, coarsely ground
- 1 teaspoon salt
- 1/2 cup vegetable oil
- 1 medium onion, chopped
- 1 1/2 cups all-purpose baking mix
- 1 1/4 cups American cheese, grated
- 4 cups grated zucchini
How To Make zucchini dressing

Step 1Mix together the eggs, oil, spices, and baking mix.

Step 2Mix the shredded zucchini.

Step 3Mix in the onion and cheese. Reserve some cheese for the topping.

Step 4Spread mixture into an 8x10 inch glass dish and top with cheese.
