Ingredients For zucchini casserole

  • 5
    eggs
  • 2/3 c
    oil
  • 1 Tbsp
    parsley flakes (optional)
  • 3/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 2/3 c
    grated parmesan cheese
  • 1-1/4 c
    chopped onion
  • 3-3/4 c
    grated zucchini (about 3 medium zucchinis)
  • 1-1/4 c
    bisquick

How To Make zucchini casserole

    Place zucchini in a colander, sprinkle with salt, and allow to sit for about 10 minutes. After 10 minutes, squeeze out moisture from the zucchini.

    Beat eggs until frothy. Mix in oil, parsley, 3/4 tsp. salt and 1/4 tsp. pepper. Stir in remaining ingredients, in order given.

    Pour into shallow greased 9 inch casserole. Bake at 350 degrees for about 35 minutes. Serve hot.
