Ingredients
- 5 - eggs
- 2/3 cup oil
- 1 tablespoon parsley flakes (optional)
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 2/3 cup grated parmesan cheese
- 1-1/4 cup chopped onion
- 3-3/4 cup grated zucchini (about 3 medium zucchinis)
- 1-1/4 cup bisquick
How To Make zucchini casserole

Step 1Place zucchini in a colander, sprinkle with salt, and allow to sit for about 10 minutes. After 10 minutes, squeeze out moisture from the zucchini.

Step 2Beat eggs until frothy. Mix in oil, parsley, 3/4 tsp. salt and 1/4 tsp. pepper. Stir in remaining ingredients, in order given.

Step 3Pour into shallow greased 9 inch casserole. Bake at 350 degrees for about 35 minutes. Serve hot.
