This recipe came from my favorite person in the world. It is great as a potluck side dish. And a great way to use up Zucchini! To save time, use your food processor to grate and chop the veggies.

coarse grated zucchini
1 c
grated carrots
1/4 c
chopped onion
1 box
stove top dressing, any flavor
1/4 c
1 c
sour cream
1 can(s)
cream of mushroom soup, undiluted or cream of chicken soup

How to Make Zucchini Casserole


  • 1Saute zucchini and carrots in large skillet with a small amount of water until tender. Drain.
  • 2Add remaining ingredients and mix until blended.
  • 3Pour into a buttered casserole dish. Bake at 350 degreese for 35 minutes.
  • 4If desired, to cut calories, you can use low fat mayonnaise, fat free or low fat sour cream and low fat cream soups.
