This recipe came from my favorite person in the world. It is great as a potluck side dish. And a great way to use up Zucchini! To save time, use your food processor to grate and chop the veggies.

Ingredients
- 6 cups coarse grated zucchini
- 1 cup grated carrots
- 1/4 cup chopped onion
- 1 box stove top dressing, any flavor
- 1/4 cup mayonnaise
- 1 cup sour cream
- 1 can cream of mushroom soup, undiluted or cream of chicken soup
How To Make zucchini casserole

Step 1Saute zucchini and carrots in large skillet with a small amount of water until tender. Drain.

Step 2Add remaining ingredients and mix until blended.

Step 3Pour into a buttered casserole dish. Bake at 350 degreese for 35 minutes.

Step 4If desired, to cut calories, you can use low fat mayonnaise, fat free or low fat sour cream and low fat cream soups.
