This recipe came from my favorite person in the world. It is great as a potluck side dish. And a great way to use up Zucchini! To save time, use your food processor to grate and chop the veggies.

Ingredients

  • 6 cups coarse grated zucchini
  • 1 cup grated carrots
  • 1/4 cup chopped onion
  • 1 box stove top dressing, any flavor
  • 1/4 cup mayonnaise
  • 1 cup sour cream
  • 1 can cream of mushroom soup, undiluted or cream of chicken soup

How To Make zucchini casserole

  • Step 1
    Saute zucchini and carrots in large skillet with a small amount of water until tender. Drain.
  • Step 2
    Add remaining ingredients and mix until blended.
  • Step 3
    Pour into a buttered casserole dish. Bake at 350 degreese for 35 minutes.
  • Step 4
    If desired, to cut calories, you can use low fat mayonnaise, fat free or low fat sour cream and low fat cream soups.
