If you have a garden then this recipe is for you! Use your fresh garden zucchini and peppers. You may even have the fresh oregano and parsley growing too. Enjoy!

Ingredients For zucchini casserole

  • 3 c
    shredded zucchini
  • 1/2 c
    finely chopped green peppers
  • 1/2 c
    finely chopped onions
  • 1/2 tsp
    oregano
  • 1/2 tsp
    salt
  • 2 tsp
    parsley
  • 1 c
    bisquick
  • 1/2 c
    shredded cheddar cheese
  • 3 Tbsp
    parmesan cheese
  • 4
    eggs
  • 1/2 c
    oil

How To Make zucchini casserole

  • 1
    Mix all ingredients and then place in a 9x13 greased pan. Bake at 325 deg. for about 30 minutes. (The top of the casserole will only brown slightly)
