This recipe was given to me by my daughter.It's one of the best squash recipes that I've ever tasted.

Ingredients For yellow squash recipe
yellow crooked neck squash
butter or margarine, melted
1 1/2 c
shredded cheddar cheese
1 1/4 c
round buttery cracker crumbs, divided
bacon, cooked and crumbled
eggs, lightly beaten
How To Make yellow squash recipe
Combine squash and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until tender.Drain well, and mash. Drain again and set aside.
Saute onion in butter in large skillet over medium heat until tender. Combine squash, onion, cheese, 3/4 cup cracker crumbs, salt and remaining three ingredients; stir well.
Spoon mixture into a lightly greased 2 quart casserole; sprinkle with remaining 1/2 cup cracker crumbs. Bake, uncovered, at 350* for 40-45 minutes or until throughly heated.
