Ingredients
- 2 pounds yellow crooked neck squash
- 1 cup water
- 2 small onions, chopped
- 2 teaspoons butter or margarine, melted
- 1 1/2 cups shredded cheddar cheese
- 1 1/4 cups round buttery cracker crumbs, divided
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices bacon, cooked and crumbled
- 2 large eggs, lightly beaten
How To Make yellow squash recipe

Step 1Combine squash and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until tender.Drain well, and mash. Drain again and set aside.

Step 2Saute onion in butter in large skillet over medium heat until tender. Combine squash, onion, cheese, 3/4 cup cracker crumbs, salt and remaining three ingredients; stir well.

Step 3Spoon mixture into a lightly greased 2 quart casserole; sprinkle with remaining 1/2 cup cracker crumbs. Bake, uncovered, at 350* for 40-45 minutes or until throughly heated.
