  • 2 lb
    yellow squash
  • 1/2 large
    onion, chopped
  • 1 tube(s)
    ritz crackers, crushed
  • 1 c
    sharp cheddar cheese
  • 2
  • 3/4 c
    whole milk
  • 1/2 c
    butter, melted
  • ·
    salt & pepper to taste

How to Make Yellow Squash Casserole


  1. Preheat Oven to 400 degrees F.
  2. Lightly steam squash and onion in steamer basket for about 5 minutes. Drain and set aside.
  3. In Medium bowl combine cracker crumbs and cheese.
  4. In Large bowl, add drained squash and onion. Gently fold in half the cracker/cheese mixture.
  5. In a small bowl, whisk together egg and milk, then add to squash mixture. Add half of the melted butter to the squash mixture. Season with salt and pepper.
  6. Spread squash mixture in a 9 x 13 baking dish. Top with remaining cracker/cheese mixture. Pour remaining butter over top of casserole.
  7. Bake at 400 degrees for 25 minutes, and lightly brown.
