Ingredients
- 2 pounds yellow squash
- 1/2 large onion, chopped
- 1 tube ritz crackers, crushed
- 1 cup sharp cheddar cheese
- 2 - eggs
- 3/4 cup whole milk
- 1/2 cup butter, melted
- - salt & pepper to taste
How To Make yellow squash casserole

Step 1Preheat Oven to 400 degrees F.

Step 2Lightly steam squash and onion in steamer basket for about 5 minutes. Drain and set aside.

Step 3In Medium bowl combine cracker crumbs and cheese.

Step 4In Large bowl, add drained squash and onion. Gently fold in half the cracker/cheese mixture.

Step 5In a small bowl, whisk together egg and milk, then add to squash mixture. Add half of the melted butter to the squash mixture. Season with salt and pepper.

Step 6Spread squash mixture in a 9 x 13 baking dish. Top with remaining cracker/cheese mixture. Pour remaining butter over top of casserole.

Step 7Bake at 400 degrees for 25 minutes, and lightly brown.
