what i got in the house casserole

Usually get grocery's on Monday so cupboards are pretty bare was looking for something to have with the left over meatloaf and this is what I come up with.

Ingredients

  • 4 slices bacon (diced)
  • 1 cup macaroni shells (whole grain)
  • 1 cup corn (i use frozen)
  • 1 cup baby limas (i used frozen)
  • 1 tablespoon sour cream
  • 1/2 cup grated sharp cheddar cheese
  • 1/2 cup grated sharp provalone cheese
  • 1 cup panko bread crumbs
  • 2 tablespoons butter, cold
  • - salt and pepper to taste

How To Make what i got in the house casserole

  • Step 1
    In a small sauce pan bring salted water to a boil for macaroni shells.
  • Step 2
    In large sauté pan brown bacon till crisp, with a slotted spoon remove macaroni from water and add to bacon.
  • Step 3
    Put corn and lima beans in water from macaroni. warm through. Drain add to pan with bacon and macaroni, add one tablespoon sour cream and heat through stirring till everything is combined.
  • Step 4
    Poor into greased casserole dish, cover the top with cheeses.Put in 350 degree oven till cheese just starts to melt, remove from oven, sprinkle with the bread crumbs, add dollops of butter , put back in oven for about 25 minutes or until bread crumbs are browned.
