I was looking for a new and interesting way to use cook my sweet potatoes, and this was exactly what the doctor ordered. This is a tasty and sweet dish that is very easy to prepare :)

Ingredients

  • 4 large sweet potatoes, 3-1/2 pounds)
  • 1 can 8 oz. can crushed pineapple (undrained)
  • 6 tablespoons melted butter or margarine
  • 3/4 teaspoon salt
  • 1 pinch pepper
  • 1/2 cup saltienes (crushed)
  • 2 tablespoons brown sugar
  • 1 pinch cloves

How To Make tropical mashed sweet potatoes

  • Step 1
    In a large sauce pan, cover sweet potatoes with water; bring to a boil. reduce heat; cover and simmer for 30 min. (or until tender). Drain and cool.
  • Step 2
    Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.
  • Step 3
    Transfer to a greased 2-qt. baking dish.
  • Step 4
    Combine saltines, brown sugar, cloves and remaining butter,; sprinkle over potatoes. Bake uncovered, at 375 degrees for 30 min.
