I was looking for a new and interesting way to use cook my sweet potatoes, and this was exactly what the doctor ordered. This is a tasty and sweet dish that is very easy to prepare :)

Ingredients
- 4 large sweet potatoes, 3-1/2 pounds)
- 1 can 8 oz. can crushed pineapple (undrained)
- 6 tablespoons melted butter or margarine
- 3/4 teaspoon salt
- 1 pinch pepper
- 1/2 cup saltienes (crushed)
- 2 tablespoons brown sugar
- 1 pinch cloves
How To Make tropical mashed sweet potatoes

Step 1In a large sauce pan, cover sweet potatoes with water; bring to a boil. reduce heat; cover and simmer for 30 min. (or until tender). Drain and cool.

Step 2Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.

Step 3Transfer to a greased 2-qt. baking dish.

Step 4Combine saltines, brown sugar, cloves and remaining butter,; sprinkle over potatoes. Bake uncovered, at 375 degrees for 30 min.
