Ingredients

  • 1/2 cup pepperidge farm cornbread stuffing
  • 1 - no. 1 can tomatoes
  • 1 tablespoon butter, melted
  • 1 tablespoon bacon drippings
  • 1/4 teaspoon seasoned salt
  • 2 teaspoons sugar
  • 3/4 cup grated sharp cheddar cheese
  • 1 cup sliced vidalia onions
  • 1/4 teaspoon oregano, dried

How To Make tomato casserole

  • Step 1
    Spread bottom of pie plate with stuffing.
  • Step 2
    In a skillet, mix tomatoes, butter, bacon drippings, salt and sugar. Heat until well blended.
  • Step 3
    Put 1/2 tomato mixture on top of stuffing.
  • Step 4
    Put 1/2 cheese on top of tomato.
  • Step 5
    Place all onions on top of cheese.
  • Step 6
    Layer remaining tomatoes, then remaining cheese.
  • Step 7
    Sprinkle with oregano. Bake at 350 F. for 30 minutes. This is an excellent Lenten main dish.
  • Step 8
    Variation: Add one layer cooked ground beef.
