Ingredients

  • 1/2 c
    pepperidge farm cornbread stuffing
  • 1
    no. 1 can tomatoes
  • 1 Tbsp
    butter, melted
  • 1 Tbsp
    bacon drippings
  • 1/4 tsp
    seasoned salt
  • 2 tsp
    sugar
  • 3/4 c
    grated sharp cheddar cheese
  • 1 c
    sliced vidalia onions
  • 1/4 tsp
    oregano, dried

How to Make Tomato Casserole

Step-by-Step

  1. Spread bottom of pie plate with stuffing.
  2. In a skillet, mix tomatoes, butter, bacon drippings, salt and sugar. Heat until well blended.
  3. Put 1/2 tomato mixture on top of stuffing.
  4. Put 1/2 cheese on top of tomato.
  5. Place all onions on top of cheese.
  6. Layer remaining tomatoes, then remaining cheese.
  7. Sprinkle with oregano. Bake at 350 F. for 30 minutes. This is an excellent Lenten main dish.
  8. Variation: Add one layer cooked ground beef.
