1/2 c
pepperidge farm cornbread stuffing
no. 1 can tomatoes
1 Tbsp
butter, melted
1 Tbsp
bacon drippings
1/4 tsp
seasoned salt
2 tsp
3/4 c
grated sharp cheddar cheese
1 c
sliced vidalia onions
1/4 tsp
oregano, dried

How to Make Tomato Casserole


  • 1Spread bottom of pie plate with stuffing.
  • 2In a skillet, mix tomatoes, butter, bacon drippings, salt and sugar. Heat until well blended.
  • 3Put 1/2 tomato mixture on top of stuffing.
  • 4Put 1/2 cheese on top of tomato.
  • 5Place all onions on top of cheese.
  • 6Layer remaining tomatoes, then remaining cheese.
  • 7Sprinkle with oregano. Bake at 350 F. for 30 minutes. This is an excellent Lenten main dish.
  • 8Variation: Add one layer cooked ground beef.
