My sister, Brenda, shared this recipe with me. I needed something quick to fix for a family gathering as I had to drive 8 hours to get there. Quick and easy and surprisingly delicious.

Ingredients

  • 1 can(s)
    kidney beans, canned
  • 1 c
    lima beans, either frozen or canned
  • 1 can(s)
    baked beans
  • 1 medium
    onion, diced
  • 1 medium
    red bell pepper
  • 2 clove
    garlic
  • 2 Tbsp
    olive oil, light

How to Make Three Bean Summer Casserole

Step-by-Step

  1. Dice onion and bell pepper. Press 2 cloves of garlic using a garlic press. Put all vegetables in a small sauce pan and add 2 tablespoons of olive oil. Saute until tender, approximately 5 minutes.
  2. In a large bowl mix together sauteed vegetables and all the beans. Pour mixture into lightly greased 8x10 casserole dish.
  3. Bake on 300 degree for 30 minutes.
