teri's quiche

Back as a senior in high school, my mom and I lived alone together ... my sister was in college & my father had died. I did a lot of the cooking, and experimented a lot with recipes. This is basically a Quiche Lorraine recipe that I adapted for us ... to me it's the best quiche you'll ever eat. Even the men in my life have enjoyed it!

Ingredients
- 1 - deep dish pie shell
- 1 1/2 cups swiss cheese, grated
- 1/2 cup green onions, chopped
- 12 ounces evaporated milk (1 can)
- 1/4 teaspoon nutmeg
- 9 slices bacon
- 4 - eggs, beaten
- 1/4 teaspoon salt
- dash cayenne pepper
How To Make teri's quiche

Step 1Poke fork holes into bottom of pie shell and bake for 5 minutes at 350 degrees

Step 2Cook bacon until crisp and crumble into small pieces.

Step 3Sprinkle bacon, cheese, and onions in bottom of pie shell (reserve about 1 tsp of bacon and 1 tsp of onion as a topping.

Step 4Add milk and seasonings to beaten eggs.

Step 5Pour liquid mixture into pie shell over chees, bacon and onions.

Step 6Bake for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Sprinkle with reserved bacon and onion.

Step 7Let set up for 5 minutes before cutting and serving.
