Ingredients
- 4 large sweet onions, thinly sliced about 1/8-inch thick, separated into rings (2-1/2 to 3 pounds)
- 2 tablespoons olive oil
- 2 teaspoons Kosher salt
- 1 teaspoon black pepper
- 1 teaspoon fresh thyme
- 1 teaspoon garlic salt
- 1 teaspoon dry mustard
- 1 teaspoon smoked paprika
- 2 teaspoons brown sugar
- 1/2 teaspoon cayenne, optional
- 8 ounces shredded cheddar cheese
- 8 ounces shredded Gruyere or other Swiss-type cheese
- 3-4 tablespoons butter, cut into several small pieces
How To Make tennessee onions casserole

Step 1Preheat the oven to 350 degrees F.

Step 2Place thinly sliced onions in a large bowl and separate rings. Coat with olive oil.

Step 3Mix seasonings in a small bowl. Sprinkle half on the onions and mix, then sprinkle on the remaining seasoning and mix thoroughly.

Step 4In a greased 9x13-inch baking dish, layer half the seasoned onions and top with half the two cheeses. Layer the remaining onions and cheeses on top and dot with pieces of butter.

Step 5Cover with aluminum foil, and bake in a preheated oven until onions are soft and sides are bubbly, about 40 minutes.

Step 6Remove foil. Bake at 350 degrees F until top is golden, about 30 minutes. Can add crushed, buttered Ritz cracker crumbs on top and brown slightly.
