This wonderfully sweet souffle makes a perfect side dish to any holiday meal, but is sweet, just like dessert!

large sweet potatoes, peeled and cubed
1 c
eggs, beaten
1/2 tsp
1 stick
1/2 c
evaporated milk
2 tsp
vanilla extract
bag mini marshmallows
1/2 c
chopped nuts (pecans/walnuts) optional

How to Make Sweet Potato Souffle


  • 1Preheat oven to 325°. Cook the potatoes in boiling water until fork tender.
  • 2Drain potatoes and whip with electric mixer.
  • 3Add sugar, eggs, salt, butter, evaporated milk and vanilla. Pour into lightly greased casserole dish.
  • 4Bake in preheated oven for 25 minutes.
  • 5Remove from oven and place marshmallows and nuts (optional) on top. Return to oven for approximately 5 minutes or until marshmallows are golden brown.
