Ingredients
- 3 - large sweet potatoes, peeled and cubed
- 1 cup sugar
- 2 - eggs, beaten
- 1/2 teaspoon salt
- 1 stick butter
- 1/2 cup evaporated milk
- 2 teaspoons vanilla extract
- 1 - bag mini marshmallows
- 1/2 cup chopped nuts (pecans/walnuts) optional
How To Make sweet potato souffle

Step 1Preheat oven to 325°. Cook the potatoes in boiling water until fork tender.

Step 2Drain potatoes and whip with electric mixer.

Step 3Add sugar, eggs, salt, butter, evaporated milk and vanilla. Pour into lightly greased casserole dish.

Step 4Bake in preheated oven for 25 minutes.

Step 5Remove from oven and place marshmallows and nuts (optional) on top. Return to oven for approximately 5 minutes or until marshmallows are golden brown.
