large sweet potatoes, peeled and cubed
chopped nuts (pecans/walnuts) optional
How to Make Sweet Potato Souffle
1Preheat oven to 325°. Cook the potatoes in boiling water until fork tender.
2Drain potatoes and whip with electric mixer.
3Add sugar, eggs, salt, butter, evaporated milk and vanilla. Pour into lightly greased casserole dish.
4Bake in preheated oven for 25 minutes.
5Remove from oven and place marshmallows and nuts (optional) on top. Return to oven for approximately 5 minutes or until marshmallows are golden brown.
