Ingredients
- 2 pounds sweet potatos or 1 lrg. can
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons vanilla extract
- 2 tablespoons flour
- 3 - eggs, well beaten w/ele mixer
- 1 stick butter, room temp.
- - confectioner's sugar, optional
How To Make sweet potato souffle

Step 1Boil unpeeled potatoes til very soft. Drain & peel. Place in mixing bowl. While still warm add sugar, baking powder, & vanilla. Beat until smooth.

Step 2Add flour, beat well, add eggs, beat well, add butter beat well.

Step 3Pour mixture into 2 qt. baking dish & bake for 1 hour or until top is light golden brown. Sprinkle with confection sugar if desired.
