I got this recipe from my mom-in-law and I believe she got it from hers. It tastes almost like a dessert, it is so rich! My favorite part is the crunchy buttery pecan topping.

Ingredients
- 3 cups cooked mashed sweet potato (susan boils them)
- 1/2 cup butter
- 2 - eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk (optional)
- CRUST TOPPING
- 1 cup brown sugar
- 1/3 cup butter
- 1/2 cup self-rising flour
- 1 cup chopped pecans
How To Make sweet potato soufflé

Step 1Mix together sweet potato mixture with electric mixer. There may be threads that are fibers from sweet potato that wind around the blades of mixer; don't put back into bowl. Pour into baking dish.

Step 2Mix topping ingredients until evenly incorporated. Put on top of sweet potato in baking dish. Bake at 375 for 25-30 minutes or until crust is brown and slightly puffed.
