A whole passle of family! I double this recipe when the whole family comes for Thanksgiving.
Ingredients
- 1 can small can of coconut
- 3 cups cooked sweet potatoes, drained if using canned
- 1/2 stick real butter
- 2 - eggs
- 1 cup sugar
- 1 teaspoon vanilla
- dash salt
- TOPPING
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
- 3/4 stick butter, melted
How To Make sweet potato casserole

Step 1Preheat oven to 350*. Place drained sweet potatoes in a 9x12 casserole dish. Mix eggs, sugar, salt, vanilla,and 1/2 stick of melted butter together. Add coconut. Spoon over sweet potatoes.

Step 2Mix brown sugar, flour, and 3/4 stick melted butter and pecans together until well coated. Spoon over sweet potatoes. Bake at 350* for 25 minutes.
