A good friend from work in 1983 gave me this recipe and it has been a hit with everyone ever since; usually make it every year for Thanksgiving & sometimes Christmas or during year! I am always asked for the recipe; it's delicious!

Ingredients For sweet potato casserole

5-6 lgsweet potatoes, or 3 large whole canned

1 cwhite sugar

1/4 corange juice

1/4 cmilk
-
1/3 cbutter (unsalted)

3eggs, large
-
1 tspvanilla
-
1 tspcinnamon
-
1 pinchsalt
- COCONUT PECAN TOPPING

1/3 cbutter, softened
-
1/3 call purpose flour
-
1 clight brown sugar
-
1 cchopped pecans
-
1 cflaked, sweetened coconut
How To Make sweet potato casserole

1Microwave fresh sweet potatoes til cooked (or heat canned)...fresh is much better! Scoop out potatoes into large bowl, lightly beat eggs & add all ingredients to potatoes & stir until well mixed. Pour into buttered pan or glass rectangle dish. (10x12)?

2For topping: Mix all together and sprinkle on top of sweet potatoes. Bake in pre-heated 375o oven for 25 min. ENJOY!!
