sweet potato casserole

A good friend from work in 1983 gave me this recipe and it has been a hit with everyone ever since; usually make it every year for Thanksgiving & sometimes Christmas or during year! I am always asked for the recipe; it's delicious!

Ingredients
- 5-6 large sweet potatoes, or 3 large whole canned
- 1 cup white sugar
- 1/4 cup orange juice
- 1/4 cup milk
- 1/3 cup butter (unsalted)
- 3 - eggs, large
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 pinch salt
- COCONUT PECAN TOPPING
- 1/3 cup butter, softened
- 1/3 cup all purpose flour
- 1 cup light brown sugar
- 1 cup chopped pecans
- 1 cup flaked, sweetened coconut
How To Make sweet potato casserole

Step 1Microwave fresh sweet potatoes til cooked (or heat canned)...fresh is much better! Scoop out potatoes into large bowl, lightly beat eggs & add all ingredients to potatoes & stir until well mixed. Pour into buttered pan or glass rectangle dish. (10x12)?

Step 2For topping: Mix all together and sprinkle on top of sweet potatoes. Bake in pre-heated 375o oven for 25 min. ENJOY!!
