sweet potato casserole

A good friend from work in 1983 gave me this recipe and it has been a hit with everyone ever since; usually make it every year for Thanksgiving & sometimes Christmas or during year! I am always asked for the recipe; it's delicious!

Ingredients

  • 5-6 large sweet potatoes, or 3 large whole canned
  • 1 cup white sugar
  • 1/4 cup orange juice
  • 1/4 cup milk
  • 1/3 cup butter (unsalted)
  • 3 - eggs, large
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • COCONUT PECAN TOPPING
  • 1/3 cup butter, softened
  • 1/3 cup all purpose flour
  • 1 cup light brown sugar
  • 1 cup chopped pecans
  • 1 cup flaked, sweetened coconut

How To Make sweet potato casserole

  • Step 1
    Microwave fresh sweet potatoes til cooked (or heat canned)...fresh is much better! Scoop out potatoes into large bowl, lightly beat eggs & add all ingredients to potatoes & stir until well mixed. Pour into buttered pan or glass rectangle dish. (10x12)?
  • Step 2
    For topping: Mix all together and sprinkle on top of sweet potatoes. Bake in pre-heated 375o oven for 25 min. ENJOY!!
