sweet potato casserole
I have tried several sweet potato casserole recipes, but none of them come near the one my mom always made for the holidays. This is even better as leftovers than it is fresh!

Ingredients
- 2 cups sweet potatoes, cooked, peeled and mashed
- 1/3 cup butter or margarine
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 large eggs, slightly beaten
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup all-purpose flour
- 1 cup pecans
- 1/2 cup butter or margarine
How To Make sweet potato casserole

Step 1Bake sweet potatoes until very soft; scoop out contents and put into a mixing bowl.

Step 2Soften 1/3 c margarine and add to sweet potatoes. Mix in sugar, salt, eggs, vanilla, and 1/4 c flour, and pour into a greased 8” x 8” casserole dish.

Step 3Melt 1/3 c butter and cut in flour and brown sugar until well blended. Add pecans and mix well. Spread mixture uniformly over sweet potatoes. Bake at 350 degrees F for 30 minutes.
