Ingredients

1/2 c
butter
1 pkg
jiffy corn muffin mix
1 medium
onion, chopped
1
egg, beaten
1 medium
green pepper, chopped
1 c
shredded cheddar cheese
1 can(s)
whole corn, drained
1 can(s)
cream style corn
salt & pepper to taste

Step-By-Step

1Saute onion and green pepper in the 1/2 cup butter until soft. Use low temp to not burn butter.
2Mix butter mixture with all other ingredients, except cheese.
3Pour into greased casserole dish (8x8 inch) and top with the 1 cup grated cheese.
4Bake (uncovered) at 375 degrees for 45 minutes to 1 hour, until firm.
5Double this recipe and it fits into a 13 x 9 inch casserole dish.
