Ingredients

  • 1 cup seasoned salad croutons
  • 6 tablespoons sweet and tangy seasoning, divided
  • 6 small potatoes, peeled and cut into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 2/3 pound leftover cooked ham, cut into 1/2 inch cubes
  • 1 medium red onion, finely chopped
  • 2 tablespoons Irish butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups heavy cream
  • 3/4 cup half and half
  • 3 teaspoons ground black pepper
  • 8 ounces shredded sharp cheddar cheese
  • 1/2 cup dry bread crumbs

How To Make sweet and tangy potato casserole with ham

  • Step 1
Coat a 1 1/2 quart baking dish with cooking spray. Add cubed cream cheese, salad croutons, and 2 tablespoons sweet and tangy seasoning; mix well.
  • Step 2
Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes; drain.
  • Step 3
Preheat oven to 350 degrees F.
  • Step 4
Heat olive oil in a large, deep skillet over medium heat. Add cubed ham and chopped red onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Step 5
Stir in cooked potatoes and 2 tablespoons of sweet and tangy seasoning. Remove from heat.
  • Step 6
Spoon into the prepared baking dish and spread evenly.
  • Step 7
Melt Irish butter in a medium saucepan over medium heat.
  • Step 8
Whisk in flour and 1 tablespoon sweet and tangy seasoning and stir until the mixture becomes paste-like and light golden brown, about 5 minutes.
  • Step 9
Gradually whisk heavy cream and half and half into the flour mixture; season with black pepper and the remaining sweet and tangy seasoning.
  • Step 10
Continue cooking and stirring until thickened, about 2 minutes. Reduce heat to medium-low and stir in sharp cheddar cheese until melted.
  • Step 11
Pour cheese sauce over ham and potatoes in the baking dish. Sprinkle with bread crumbs on top.
  • Step 12
Bake in the preheated oven until sauce is bubbly and browned, 25 minutes.
