Ingredients
- 2 lbs - sliced yellow squash casserole
- 4 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (red, green, or orange)
- 1 tablespoon lemon zest, grated
- 1/2 cup freshly grated sharp chedder cheese
- 1/2 cup vegan mayonnaise
- 1 teaspoon sugar
- 1 - beaten whole egg
- - chop fresh parsley for topping, and crumbled,ritz crackers
How To Make summertime garden casserole

Step 1Cook squash in boiling salted water until slightly tender about 3-5 minutes. Drain. Saute peppers and onions in butter until soft. Combine with squash. Fold in mayo,cheese,egg,sugar. salt and pepper. Pour into a 1 1/2 quart casserole dish. Top with crushed crackers and chopped fresh parsley. Bake uncovered for 30 minutes in preheated oven at 350 degrees. note:this can be frozen after cooking.
