It's a great end or in the middle of summer veggies. Easy to fix and great to eat.

Ingredients

  • 2 lbs - sliced yellow squash casserole
  • 4 tablespoons butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (red, green, or orange)
  • 1 tablespoon lemon zest, grated
  • 1/2 cup freshly grated sharp chedder cheese
  • 1/2 cup vegan mayonnaise
  • 1 teaspoon sugar
  • 1 - beaten whole egg
  • - chop fresh parsley for topping, and crumbled,ritz crackers

How To Make summertime garden casserole

  • Step 1
    Cook squash in boiling salted water until slightly tender about 3-5 minutes. Drain. Saute peppers and onions in butter until soft. Combine with squash. Fold in mayo,cheese,egg,sugar. salt and pepper. Pour into a 1 1/2 quart casserole dish. Top with crushed crackers and chopped fresh parsley. Bake uncovered for 30 minutes in preheated oven at 350 degrees. note:this can be frozen after cooking.
