- 2 boxes frozen chopped spinach (10 oz each)
- 3/4 cup butter
- 6 large eggs
- 1 package chicken flavored stuffing (6 oz)
- 1/2 cup shredded Parmesan cheese

We used a cookie scoop to have the balls a uniform size.

Step 1Cook and drain the spinach. Squeeze as much water out as possible.

Step 2Return the hot spinach to the pot. Add the butter. Stir until melted and set aside.

Step 3In a medium mixing bowl, beat together the eggs.

Step 4Stir in the stuffing mix and Parmesan cheese.

Step 5Stir in slightly cooled spinach.

Step 6Cover and chill for 2 hours.

Step 7Preheat the oven to 350 degrees F. Form walnut-sized balls out of the spinach mixture.
