Ingredients

  • 2 boxes frozen chopped spinach (10 oz each)
  • 3/4 cup butter
  • 6 large eggs
  • 1 package chicken flavored stuffing (6 oz)
  • 1/2 cup shredded Parmesan cheese

How To Make spinach balls

We used a cookie scoop to have the balls a uniform size.
  • Squeeze water out of the cooked spinach.
    Step 1
    Cook and drain the spinach. Squeeze as much water out as possible.
  • Add butter and spinach to a saucepan and heat until butter is melted.
    Step 2
    Return the hot spinach to the pot. Add the butter. Stir until melted and set aside.
  • Whisk eggs in a bowl.
    Step 3
    In a medium mixing bowl, beat together the eggs.
  • Stir in stuffing mix and Parmesan cheese.
    Step 4
    Stir in the stuffing mix and Parmesan cheese.
  • Stir in slightly cooled spinach.
    Step 5
    Stir in slightly cooled spinach.
  • Cover and chill the mixture.
    Step 6
    Cover and chill for 2 hours.
  • Form spinach mixture into balls.
    Step 7
    Preheat the oven to 350 degrees F. Form walnut-sized balls out of the spinach mixture.
  • Bake for 20 minutes.
    Step 8
    Bake on an ungreased cookie sheet for 20 minutes.
