- 4 tablespoons butter
- 3/4 cup scallions, chopped
- 4 cups white rice, cooked
- 2 cups light sour cream
- 1 cup low-fat cottage cheese, small curd
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cans chopped green chilies, drained (4 oz each; mild or medium)
- 2 cups grated sharp cheddar cheese
How To Make southwest rice bake - texas style

Step 1Preheat oven to 375 degrees F.

Step 2Spray a 9 x 13 inch baking dish and set aside.

Step 3In a skillet, melt the butter and cook onions until softened.

Step 4Add onions to balance of ingredients and mix well.

Step 5Add mixture to prepared baking dish. Bake at 375 degrees for approximately 25 minutes.
