    scallions, chopped
  • 4 c
    white rice, cooked
  • 2 c
    light sour cream
  • 1 c
    low-fat cottage cheese, small curd
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 2 can
    chopped green chilies, drained (4 oz each; mild or medium)
  • 2 c
    grated sharp cheddar cheese

    Preheat oven to 375 degrees F.

    Spray a 9 x 13 inch baking dish and set aside.

    In a skillet, melt the butter and cook onions until softened.

    Add onions to balance of ingredients and mix well.

    Add mixture to prepared baking dish. Bake at 375 degrees for approximately 25 minutes.
