Ingredients

  • 4 tablespoons butter
  • 3/4 cup scallions, chopped
  • 4 cups white rice, cooked
  • 2 cups light sour cream
  • 1 cup low-fat cottage cheese, small curd
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cans chopped green chilies, drained (4 oz each; mild or medium)
  • 2 cups grated sharp cheddar cheese

How To Make southwest rice bake - texas style

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    Spray a 9 x 13 inch baking dish and set aside.
  • Step 3
    In a skillet, melt the butter and cook onions until softened.
  • Step 4
    Add onions to balance of ingredients and mix well.
  • Step 5
    Add mixture to prepared baking dish. Bake at 375 degrees for approximately 25 minutes.
