Most squash casserole I've ever had is very simple; squash, crackers, cheese. I found this recipe and changed it a little. It turned out pretty good. This makes a big 9x13 pan full since I usually feed a crowd.

3 lb
sliced yellow squash
2 box
chicken flavored stuffing (i.e. stovetop)
1 can(s)
cream of chicken soup
1 can(s)
cream of mushroom soup
1 c
sour cream
1 large
onion, diced
1/2 stick
1 pkg
shredded cheddar (3 cup bag)

How to Make Savory Squash Casserole


  • 1Boil squash till slightly tender, drain.
  • 2Sautee diced onions till tender in magerine.
  • 3Mix together soups, sour cream, onions, 1.5 cups of the cheese & onions/magerine.
  • 4Stir in stuffing mixes & squash.
  • 5Spread in 9x13 pan.
  • 6Top with remaining cheese.
  • 7Bake at 350 till cheese on top is browned a little.
