Most squash casserole I've ever had is very simple; squash, crackers, cheese. I found this recipe and changed it a little. It turned out pretty good. This makes a big 9x13 pan full since I usually feed a crowd.

Ingredients

  • 3 lb
    sliced yellow squash
  • 2 box
    chicken flavored stuffing (i.e. stovetop)
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    cream of mushroom soup
  • 1 c
    sour cream
  • 1 large
    onion, diced
  • 1/2 stick
    margerine
  • 1 pkg
    shredded cheddar (3 cup bag)

How to Make Savory Squash Casserole

Step-by-Step

  1. Boil squash till slightly tender, drain.
  2. Sautee diced onions till tender in magerine.
  3. Mix together soups, sour cream, onions, 1.5 cups of the cheese & onions/magerine.
  4. Stir in stuffing mixes & squash.
  5. Spread in 9x13 pan.
  6. Top with remaining cheese.
  7. Bake at 350 till cheese on top is browned a little.
