Most squash casserole I've ever had is very simple; squash, crackers, cheese. I found this recipe and changed it a little. It turned out pretty good. This makes a big 9x13 pan full since I usually feed a crowd.

Ingredients

  • 3 pounds sliced yellow squash
  • 2 boxes chicken flavored stuffing (i.e. stovetop)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 large onion, diced
  • 1/2 stick margerine
  • 1 package shredded cheddar (3 cup bag)

How To Make savory squash casserole

  • Step 1
    Boil squash till slightly tender, drain.
  • Step 2
    Sautee diced onions till tender in magerine.
  • Step 3
    Mix together soups, sour cream, onions, 1.5 cups of the cheese & onions/magerine.
  • Step 4
    Stir in stuffing mixes & squash.
  • Step 5
    Spread in 9x13 pan.
  • Step 6
    Top with remaining cheese.
  • Step 7
    Bake at 350 till cheese on top is browned a little.
