I love the flavor that ranch dressing mix gives to casseroles. This is my take on a yellow squash dish.

Ingredients

  • 4 - 6 medium yellow squash, cut into 1" cubes
  • 1 small onion, diced
  • 3 tablespoons butter
  • 2 large beaten eggs
  • 1/2 cup mayonnaise
  • 1 package Hidden Valley Ranch dressing mix (dry)
  • 1 cup grated sharp cheddar cheese
  • salt and pepper
  • 2 - rolls Ritz crackers, crushed
  • 1/4 cup melted butter (or more as needed)

How To Make ranch-style squash casserole

  • Step 1
    Saute squash and onion in butter until tender, squash still holding its shape. Drain well.
  • Step 2
    In a large casserole dish, add the drained squash and onion. Add beaten eggs, mayo, dressing mix, cheese, 2/3 cup cracker crumbs, salt, and pepper. Mix well.
  • Step 3
    Combine remaining crumbs with melted butter until moist. Sprinkle crumbs evenly on top of the casserole.
  • Step 4
    Bake for 30 minutes at 350 degrees F.
