ranch-style squash casserole
I love the flavor that ranch dressing mix gives to casseroles. This is my take on a yellow squash dish.

Ingredients
- 4 - 6 medium yellow squash, cut into 1" cubes
- 1 small onion, diced
- 3 tablespoons butter
- 2 large beaten eggs
- 1/2 cup mayonnaise
- 1 package Hidden Valley Ranch dressing mix (dry)
- 1 cup grated sharp cheddar cheese
- salt and pepper
- 2 - rolls Ritz crackers, crushed
- 1/4 cup melted butter (or more as needed)
How To Make ranch-style squash casserole

Step 1Saute squash and onion in butter until tender, squash still holding its shape. Drain well.

Step 2In a large casserole dish, add the drained squash and onion. Add beaten eggs, mayo, dressing mix, cheese, 2/3 cup cracker crumbs, salt, and pepper. Mix well.

Step 3Combine remaining crumbs with melted butter until moist. Sprinkle crumbs evenly on top of the casserole.

Step 4Bake for 30 minutes at 350 degrees F.
