We love yellow squash casseroles and this one is a nice change of pace. Cook time does not include steaming time for squash.

Ingredients

  • 2 pounds yellow squash, sliced
  • 1 medium onion, chopped
  • 1 tablespoon butter
  • 2 eggs, beaten
  • 1/2 cup Mayonnaise
  • 1/2 - 1 packages Dry Hidden Valley Ranch Dressing Mix
  • 1 cup cheddar cheese, grated
  • 12 Saltine Crackers, crumbled
  • 1/2 cup crumbled Cheese Nips for topping
  • salt & pepper to taste

How To Make ranch flavored yellow squash casserole

  • Step 1
    Slice squash and steam (or boil, if you prefer, but drain really well) until tender - drain well. In a skillet, sauté onion in 1 Tbsp. butter until tender and translucent.
  • Step 2
    Combine drained squash, onion, with beaten eggs, mayo, dressing mix, cheddar cheese, crackers along with salt & pepper - mix well.
  • Step 3
    Place squash mixture in a casserole dish lightly sprayed with cooking spray. Top with crumbled Cheese Nips. Bake 30 minutes at 350 degrees.
