Ingredients
- 2 pounds yellow squash, sliced
- 1 medium onion, chopped
- 1 tablespoon butter
- 2 eggs, beaten
- 1/2 cup Mayonnaise
- 1/2 - 1 packages Dry Hidden Valley Ranch Dressing Mix
- 1 cup cheddar cheese, grated
- 12 Saltine Crackers, crumbled
- 1/2 cup crumbled Cheese Nips for topping
- salt & pepper to taste
How To Make ranch flavored yellow squash casserole

Step 1Slice squash and steam (or boil, if you prefer, but drain really well) until tender - drain well. In a skillet, sauté onion in 1 Tbsp. butter until tender and translucent.

Step 2Combine drained squash, onion, with beaten eggs, mayo, dressing mix, cheddar cheese, crackers along with salt & pepper - mix well.

Step 3Place squash mixture in a casserole dish lightly sprayed with cooking spray. Top with crumbled Cheese Nips. Bake 30 minutes at 350 degrees.
