This is another side dish recipe I created, it's for prime rib and based on Kinders' prime rib seasoning, and will be on scalloped potatoes.

Ingredients

  • 2 cups shredded Parmesan cheese, divided
  • 6 1/2 tablespoons prime rib seasoning, divided
  • 1 tablespoon olive oil
  • 3 medium carrots, sliced 1/2 inch thick
  • 1 medium red onion, peeled and chopped
  • 1 tablespoon Dijon mustard
  • 1/2 cup steak sauce mixed with brown sugar
  • 1 tablespoon crushed red pepper flakes
  • 1 tablespoon margarine
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1 can evaporated milk
  • 8 ounces cream cheese, cut into 1/2 inches
  • 8 ounces pepper jack cheese, grated
  • 6 medium russet potatoes, cut into 1/4-inch-thick slices

How To Make prime scalloped potatoes

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat a 13 x 9-inch baking dish with cooking spray. Add 1 cup shredded Parmesan cheese and 2 tablespoons prime rib seasoning; mix well.
  • Step 3
    Heat olive oil in a large, deep skillet over medium heat. Add sliced carrots and chopped red onion. Cook and saute for 4 minutes until they are tender.
  • Step 4
    Stir in Dijon mustard, steak sauce/brown sugar, red pepper flakes, and 2 tablespoons prime rib seasoning. Remove from heat.
  • Step 5
    Heat the margarine in a medium saucepan over medium-low heat. Gradually whisk in flour. Cook, whisking constantly, 2 minutes.
  • Step 6
    Stir in heavy cream, evaporated milk, cubed cream cheese, and remaining prime rib seasoning; simmer for 8 minutes until slightly thickened.
  • Step 7
    Add grated pepper jack cheese; whisk until lightly smooth.
  • Step 8
    Arrange half of the sliced russet potatoes and half of the carrot mixture in the bottom of the prepared baking dish. Spoon half of the cheese sauce mixture. Repeat layers. Sprinkle with the remaining shredded Parmesan cheese.
  • Step 9
    Cover with aluminum foil.
  • Step 10
    Bake at 350 degrees for 1 hour. Uncover; bake an additional 20 minutes or until potatoes are tender and cheese is melted.
