Ingredients

  • 3 cups sweet potatoes, whole canned
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 cup orange juice
  • 8 3/4 ounces pineapple, crushed, drained
  • 4 - marshmallows, cut in half
  • - walnuts, halved (optional)
  • - pineapple spears (optional)

How To Make pineapple sweet potato casserole

  • Step 1
    Mash potatoes, add butter, salt and orange juice; beat with electric or rotary beater until light and fluffy.
  • Step 2
    Add crushed pineapple.
  • Step 3
    Pour into greased 1-quart casserole. Dot with butter.
  • Step 4
    Bake in a 350 degree oven about 45 minutes.
  • Step 5
    During last 10 or 15 minutes of baking, top casserole with halved marshmallows (walnut halves and pineapple spears, too, if desired).
  • Step 6
    Bake until marshmallows are melted and golden.
