Ingredients
- 3 cups sweet potatoes, whole canned
- 3 tablespoons butter
- 1/2 teaspoon salt
- 1/4 cup orange juice
- 8 3/4 ounces pineapple, crushed, drained
- 4 - marshmallows, cut in half
- - walnuts, halved (optional)
- - pineapple spears (optional)
How To Make pineapple sweet potato casserole

Step 1Mash potatoes, add butter, salt and orange juice; beat with electric or rotary beater until light and fluffy.

Step 2Add crushed pineapple.

Step 3Pour into greased 1-quart casserole. Dot with butter.

Step 4Bake in a 350 degree oven about 45 minutes.

Step 5During last 10 or 15 minutes of baking, top casserole with halved marshmallows (walnut halves and pineapple spears, too, if desired).

Step 6Bake until marshmallows are melted and golden.
