I found this casserole on the net...I love all things Pineapple, so I was looking for a side dish we might like. Thought I'd share it with my friends on JAP since I liked it. Ingredients

  • 2 cans (15 oz) cans pinapple chunks
  • 1 cup sugar (but i used splenda)
  • 6 tablespoons flour
  • 2 cups shredded cheddar cheese
  • 1/2 cup melted butter
  • 1 cup cornflakes (this one has 'ritz crackers' instead)

How To Make pineapple casserole...cin

  • Step 1
    Drain pineapple, reserving 6 tablespoons juice. Combine sugar and flour in bowl; stir in reserved juice. Add cheese and pineapple chunks; mix well. Spoon into greased baking dish. Sprinkle mixture of butter and cornflakes over top and bake 20-30 minutes at 350° *Note from Ann Kelly: I use ritz crackers in mine instead of corn flakes (I always have crackers on hand) and don't add the flour or sugar anymore. It tastes the same and saves a few calories :) *NOTE from Cin: I use Splenda, 1/2 the flour and Cornflakes.
