This recipe was given to me by an old high school friend at a reunion. Easy alternative to home made pierogi.

Ingredients For pierogi pie

9 to 12lasagna noodles, cooked

10 to 12potatoes, mashed
-
2 stickbutter
-
2 lgonions, finely diced

3/4 lbvelvetta cheese
How To Make pierogi pie

1Preheat oven to 350 degrees. Butter bottom and sided of a 13 X 9 pan.

2Saute onions in butter (brown).

3Add Velvetta cheese to warm mashed potatoes in small pieces. Add 1/3 of the sautéed onions to potato mixture.

4Layer noodles and 1/2 the potato mixture. Repeat 2nd time, add remaining onion on top.

5Cover and bake for 23 min.
