pierogi pie
This recipe was given to me by an old high school friend at a reunion. Easy alternative to home made pierogi.

Ingredients
- 9 to 12 - lasagna noodles, cooked
- 10 to 12 - potatoes, mashed
- 2 sticks butter
- 2 large onions, finely diced
- 3/4 pound velvetta cheese
How To Make pierogi pie

Step 1Preheat oven to 350 degrees. Butter bottom and sided of a 13 X 9 pan.

Step 2Saute onions in butter (brown).

Step 3Add Velvetta cheese to warm mashed potatoes in small pieces. Add 1/3 of the sautéed onions to potato mixture.

Step 4Layer noodles and 1/2 the potato mixture. Repeat 2nd time, add remaining onion on top.

Step 5Cover and bake for 23 min.
