Ingredients
- 2 packages 10 (ounces) frozen chopped spinach
- 1/2 cup margarine or butter
- 1-2 - crushed clove garlic
- 1 tablespoon potato starch
- 2 tablespoons dried onion soup mix
- 2 - eggs, beaten
- 1/2 cup matzo meal
How To Make passover spinach casserole

Step 1Cook spinach; drain well. Melt margarine in skillet and saute garlic. Blend in potato starch, then onion soup mix. Add a little water. Remove from heat.

Step 2Stir beaten egg and matzo meal into spinach. Add margarine mixture, then salt and pepper to taste.

Step 3Pour into well greased 1 1/2 quart casserole dish. Bake at 350 degrees for 25 minutes.
