one dish broccoli casserole
Recently, a friend gave us a big bag full of beautiful, fresh broccoli from his greenhouse. I really wanted to make a broccoli casserole, but the older I get, the more I dislike having to clean up after cooking, so I created this recipe and technique to microwave/steam, mix, bake and serve all in one dish! It was quick and easy, and turned out great! Delish!

Ingredients
- 4 cups broccoli florets, cooked fork tender, drained (see *note)
- 1/2 cup sweet onion, diced small
- 1 can cream of mushroom soup, undiluted
- 1/3 cup mayonnaise
- salt & pepper to taste
- 4 tbsp butter (1/2 stick), melted
- 2 lg eggs, slightly beaten
- 1 1/2 c shredded sharp cheddar cheese, divided
- 1/2 cup crushed club crackers (see*note), crumbled
How To Make one dish broccoli casserole

Step 1Add 2-3 tablespoons water to an 8"x8" pyrex type baking dish.

Step 2Add broccoli, cover with wax paper, and microwave on high power for 5-6 minutes, until tender crisp; tilt dish to drain over a crumpled up paper towel on the counter.

Step 3Add onions to broccoli; stir to mix.

Step 4Push the broccoli and onions to the corner of the dish, as much as possible.

Step 5Empty can of mushroom soup into opposite corner, stirring the soup to smooth it some. Make a "well" in center of soup. (Set empty soup can to the side to use in beating eggs.)

Step 6To the well, add 1/3 cup mayonnaise, 1/2 teaspoon salt (or to taste,) and a couple of grinds of black pepper. Mix the soup and mayo mixture until well blended, avoiding the broccoli in the opposite corner.

Step 7Stir melted butter into soup mixture; make a well in middle of soup mixture.

Step 8Break eggs into empty soup can and beat with a fork; pour beaten eggs into well in soup mixture.

Step 9Stir to combine eggs with soup, then stir into broccoli; add 3/4 cup shredded cheddar cheese; combine well.

Step 10Smooth mixture, then top with remainder of cheese.

Step 11Sprinkle cracker crumbs over all.

Step 12Bake at 350 degrees F, uncovered, for 45 minutes.

Step 13Remove from oven and allow to sit for about 15 minutes before serving. Cover and refrigerate leftovers.
