This is an old recipe from Flavors of Cape Cod cookbook. I remember my mom making this many times and she would bake it with a nice bread crumb topping and just the right amount of spice in it. This is very similar to hers.

Ingredients
- 4 medium tomatoes, peeled and diced (or canned)
- - seasonings to taste: basil, oregano, marjoram, parsley, dill, caraway, onion flakes
- 2 teaspoons sugar
- 1/2 teaspoon salt
- - pepper to taste
- - butter to taste
- 2 slices bread, diced

Step 1Mix all ingredients in saucepan and bring to boil. Simmer for few minutes to meld the flavors. Alternate: pour all ingredients into baking dish and bake for 10 minutes at 350 degrees. Dot the stewed tomatoes with butter just before serving.

Step 2I like to top the casserole dish with buttered bread crumbs with Parmesan cheese added, yum.
