my best mac 'n' cheese

We LOVE mac 'n' cheese and I finally came up with a recipe that makes everyone in our family happy. It is cheesy goodness and don't let the dry mustard scare you. It gives an added depth of flavor and really enhances the cheese. This mac 'n' cheese reheats really well IF you have any left. :)

Ingredients

  • 1 3/4 cups dry, small elbow macaroni
  • 3 tablespoons butter at room temperature
  • 2 cups grated sharp cheddar cheese
  • 2 cups grated monterey jack cheese
  • 1 1/2 cups grated white american cheese
  • 1 - large egg
  • 2 cups milk
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon dry mustard
  • - good pinch of cayenne pepper or to taste
  • - salt and pepper to taste

How To Make my best mac 'n' cheese

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Cook macaroni according to package directions. Drain and toss with butter.
  • Step 3
    Put half the noodles in a lightly buttered 2 quart casserole dish, lightly sprinkle with salt and pepper. Top with half the grated cheeses. Repeat layers.
  • Step 4
    Whisk flour, mustard and cayenne pepper together in a separate bowl. Add milk and whisk really well to incorporate flour. Add egg and whisk until well blended. Pour over noodles and cheese.
  • Step 5
    Bake for 35 - 40 minutes or until cheese is browned to your liking. Enjoy!
