A co-worker brought this to work and we begged him to get his mother to share her recipe. I am so glad she did, it is amazing.

Ingredients
- - regular uncooked pie shell
- 6-8 - ripe tomatoes, peeled
- 1/3-1/2 - vidalia (or other sweet) onion
- 1- 1 1/2 cups sharp cheddar cheese, shredded
- - salt and pepper
- 1 - 2 tablespoons milk
- 1/2 cup hellmann's mayo
How To Make mrs. p's tomato pie

Step 1Cook the pie shell at 350 degrees for about 10 minutes

Step 2Peel and slice tomatoes to fill bottom of pie shell.

Step 3Sprinkle with chopped onion

Step 4Salt and pepper

Step 5Layer more tomatoes

Step 6Salt and pepper (again)

Step 7Mix mayo and cheese and milk to make a little more spreadable. Spoon on top and pat down to cover tomatoes.

Step 8Bake 350 degrees for 20 - 30 minutes until light golden brown

Step 9May make day ahead. Helps to absorb the tomatoes juices.
