  • 1 small onion, finely chopped
  • 1/4 cup butter
  • 2 cups cooked brown rice
  • 1 can condensed cream of mushroom soup, undiluted
  • 16 ounces frozen, chopped broccoli
  • 8 ounces velveeta cheese, melted

How To Make mother's broccoli and rice casserole

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Saute onion until very tender.
  • Step 3
    Cook the broccoli as directed on the package.Drain very well.
  • Step 4
    Combine all the ingredients. Place in a casserole dish.
  • Step 5
    Place in the oven. Cook until bubbly (about 15 minutes)
